WHAT IS MATURED CAVIAR ?
Matured caviar is caviar that has aged over time and has a nearing expiration date. The result is often a more intense caviar appreciated by connoisseurs for its raw quality. This maturation may lead to slight changes in the properties of the caviar:
- Reduction in the size of the eggs
- Increase in exudate (liquid present upon opening the tin)
- Grains may have a slightly darker color
- More pronounced iodine taste
