WHAT IS MATURED CAVIAR ? ​

Matured caviar is caviar that has aged over time and has a nearing expiration date. The result is often a more intense caviar appreciated by connoisseurs for its raw quality. This maturation may lead to slight changes in the properties of the caviar:

• Reduction in the size of the eggs ​
• Increase in exudate (liquid present upon opening the tin) ​
• Grains may have a slightly darker color​​
• More pronounced iodine taste​
